IT’S A WING THING
Would you use knives and forks with a pizza? A burger? A hot dog? No. Cutlery is futile here, too. If there’s any time for sticky fingers, this is it. Submit to the stick and lick.

INGREDIENTS
35 g (11/4 oz) cornflour (cornstarch)
2 tablespoons smoked salt
2 tablespoons barbecue spice mix
2 tablespoons smoked paprika
1.5 kg (3 lb 5 oz) chicken wings
olive oil spray
600 ml (201/2 fl oz) Coke
125 ml (4 fl oz/1/2 cup) sriracha
250 ml (81/2 fl oz/1 cup) smoky barbecue sauce
60 ml (2 fl oz/1/4 cup) Worcestershire sauce
2 tablespoons brown sugar

TOPPER

INGREDIENTS
Preheat the oven to 220°C (430°F). Line a baking tray with baking paper and top with a wire rack.

Combine the cornflour, smoked salt, barbecue spice mix, smoked paprika and a really good crack of black pepper in a large mixing bowl.

Add the wings and toss really well to coat. Spread out on the wire rack, skin side up. Give them a little spray with the oil. Bake for about 35 minutes or until cooked through.

Combine the Coke, sriracha, barbecue sauce, Worcestershire sauce and brown sugar in a saucepan. Bring to the boil over a high heat, then reduce the heat to medium–high and simmer until well reduced and sticky, about 20–25 minutes. Let cool.

Tip the wings onto a serving plate. Pour over the Coke sauce and toss to coat. Dollop on some sour cream.
